Spinach & Ricotta Ravioli Harvest

spinach and mandarinsDinner tonight will be homemade pasta filled with spinach (from my garden) and ricotta. I started making fresh pasta a couple of years ago but found the rolling out just too much hassle. A month or so ago I bought a pasta machine and boy is that a help! So tonight I’m trying filled pasta for the first time. I’ve harvested spinach, 1 large silverbeet leaf, a few basil leaves (that last plant just isn’t dying even though it’s the dead of winter) to mix with an egg, ricotta cheese and either pecorino or Parmigiano cheese for the filling. The sage leaves are to use in the tomato sauce though I’ve seen a recipe that looks pretty good which uses only sage leaves and butter on homemade ravioli.

The only way to find out if I can make yummy homemade ravioli is to try!

The mandarins are just the normal daily harvest – no letting up there.
