San Choy Bau

Last night, just as the sun was going down, Frank and I went out on a greens-harvest run. The motivation was our dinner – san choy bau – or rather the greens were our motivation to make that specific dinner.

San choy bau is a bit like a chinese taco with the mince wrapped in lettuce leaves rather than tortillas. We have plenty of lettuce leaves and I wanted to do something beyond a salad with them.
The recipe also calls for celery (which is really going gang busters) and we collected some rocket (in the process of going to seed) and some coriander to spice things up.

This photo shows my first serving. You wrap it up and eat it with your fingers. I’m using 2 lettuce leaves because, though I’ve got plenty of lettuce growing, it falls well short of grocery story size.
